Quinoa Lasagna


1 med. onion chopped
1 clove garlic
1 lb. ground beef (optional see vegetarian option below)
28 oz. tomato sauce
1 tsp. oregano
10 oz. can mushrooms
1 cup uncooked NorQuin quinoa
1 cup water
 NorQuin quinoa / brown rice lasagna noodles
1/3 cup grated parmesan cheese
6 oz. sliced mozzarella cheese
1 tsp. salt
1 cup cottage cheese

Saute onion and garlic in small amount of oil

Add ground beef and brown (optional)

Stir in tomato sauce, mushrooms, water, oregano and Quinoa. Bring to a boil and simmer 10 minutes.

Into a 9 x 13 inch baking dish, layer the following


1. One-third sauce
2. One-third noodles
3. One-third sauce
4. One-third noodles
5. Cottage Cheese
6. One-third noodles
7. One-third sauce
8. Mozzarella & Parmesan cheeses

Cover with foil and bake at 375 F for 45 mins. Uncover and bake another 15 mins. to mely cheese.

* if sauce is too thin, add 1/2 cup uncooked Quinoa to thicken

Vegetarian (omit GROUND BEEF TRY QUINOA)


Using 3-4 cups of cooled NorQuin Quinoa... Spoon thin layer of sauce in bottom of baking dish. Follow with Quinoa and cheeses. Repeat layers twice, ending with sauce. Top with parmesan cheese and bake as above.
