QUINOA AND SPINACH THAI SALAD with peanut butter dressing


Salad ingredients:

- 1 cup carrot cubes

-1 cup squash cubes                                                                       

-1/2 cup onnion cubes

-1 tbsp of Dill

- 1 cup of cooked Quinoa

- 1 tbsp olive oil

- 1 cup soy chicken cubes

Peanut butter dressing:

- 1 tbsp peanut butter

- 1 tbsp olive oil extra virgin

- 1 tbsp rice vinegar

- 1 tbsp soy

- 1 lime juice

- Pepper

- 1 tbsp sesame seed

- 1 tbsp agave syrup

For dressing:  just add all the ingredients into medium bowl and whisk until smooth.

For Salad:  In a sauce pan add oil, and sautee onions util they are transulsent. Add squash and carrot cubes. Cook low heat for 10 minutes. Add the cooked quinoa and dill and stir everything together and remove from heat.

In a large bowl add Quinoa mixture, spinach and dressing and mix together. Enjoy!
