Quinoa Waffles
| 1 cup quinoa flour |
| 1 1/4 white flour |
| 4 teaspoons baking powder |
| 3/4 teaspoons salt |
| 1 1/2 tablespoons sugar |
| 2 beaten eggs |
| 2 1/4 cups milk |
| 1/2 cup salad oil |
Sift together dry ingredients. Combine remaining ingredients and add just before baking, beat until only moistened. Batter will be thin. Bake in pre- heated waffle iron. Makes 10 to 12 waffles. The quinoa flour adds a nutty flavour and the waffles stay fresh longer than made with regular flour. If you are a celiac or are on a gluten-free diet, the pancakes can be made with l00% quinoa flour (2 1/4 cups) for a delicious breakfast treat.
