Choco-Nut Quinoa Muffins
Sift Together:
| 1 cups Norquin Brand Quinoa Flour |
| 3/4 cup granulated sugar |
| 1/4 cup cocoa |
| 4 1/2 tsp baking powder |
| 1/2 tsp salt |
Stir In:
| 1/2 cup chopped walnuts |
Beat Together:
| 1 egg |
| 1 cup milk |
| 1 cup vegetable oil or melted shortening |
Add liquid to dry ingredients and stir only until combined. (Batter will be lumpy). Fill prepared muffin cups full. Bake in preheated 400 oven for 20 to 25 minutes. Makes 12 muffins.
