Quinoa Hamburger Buns (Gluten Free)
| 1/2 cup water |
| 2 tsp sugar |
| 1 1/2 tbsp dry yeast |
Dissolve the 2 tsp. of sugar in 1/2 cup luke warm water. Sprinkle yeast on top and let sit 10 minutes until it starts foaming.
| 1/4 cup canola oil |
| 1 tsp vinegar |
| 3/4 cup water |
Mix oil with vinegar and 3/4 c. water
| 3 large eggs |
| 1/3 cup sugar (less the 2 tsp above) |
| 1 1/2 tsp salt |
| 2/3 cup nonfat dry milk |
| 2 cup quinoa flour |
| 2 cup tapioca flour |
| 3 1/2 tsp xanthan gum |
Sift together dry ingredients. Stir in the yeast mixture and the oil/vinegar mixture into the dry ingredients. Then add eggs and beat for 2 minutes with the mixer on high.
With a large serving spoon or an ice cream scoop, spoon like drop biscuits onto greased cookie sheet. Let rise in a warm oven for 20 to 30 minutes. Bake at 350 degrees for 15 to 20 minutes.
