Tabouleh
This middle eastern salad is excellent with fresh summer ripe tomatoes. The mint makes it excellent.
| 3 cups cooked NorQuin Quinoa, cooled |
The following chopped vegetables...
| 1 large tomato |
| 1 cup fresh parsley |
| 1 large cucumber |
| 1 green pepper |
| 1/2 cup green onions or finely diced red onion |
Dressing...
| 1/2 cup lemon juice |
| 2 tsp. minced garlic |
| 1/2 cup olive oil |
| 1 tsp. pepper and salt |
| Optional: 1/2 - 1 cup fresh mint or 2 Tbsp. dried |
Combine Quinoa with pepper, parsley and onion
Mix dressing ingredients together in seperate bowl. Add to Quinoa mixture. Add tomato and cucumber
Let sit for 30 minutes to allow flavors to blend.
