Quinoa Pilaf
Prepare a cup of dry quinoa by rinsing it in a sieve. Add a little less than 2 cups water and bring to a boil, then minimize to a simmer. It should take 10 to 15 minutes to come to a nice consistency.
Fry in olive oil up 2 tablespoons of grated fresh ginger, two cloves of garlic, and half a chopped green or yellow chili pepper. Add a tablespoon of brown miso. Add this to the quinoa mixture when its done cooking. Then add about 1/2 to 3/4 cup of tomato sauce and mix throroughly. Add to the finished mixture the grated rind of one orange, one chopped purple onion, and some basil. I ate this with a green salad with coriander honey mustard dressing.
Dressing is made with a tbsp of olive oil, juice of two lemons, one clove of garlic, 1 tsp mustard, 1 tbsp honey, and a dash of coriander, and black pepper to your taste. Also it's good to drizzle this on plain quinoa, or the pilaf itself.
