Quinoa and Wild Rice
| 1 cup Wild Rice |
| 1 cup NorQuin Quinoa |
| 1/3 cup bacon, chopped |
| 1/2 cup celery |
| 1 onion, chopped |
| 1 cup mushrooms, sliced |
| 1 Tbsp. margarine |
Cook Wild Rice in 4 cups boiling water about 1 hour until all water has been absorbed
During the last 15 minutes, add Quinoa and, if rice is almost dry, 1 additional cup of boiling water
While rice is cooking, fry the bacon in a pan. When crisp, remove and drain
Mix vegetables and bacon with rice and Quinoa mixture in a casserole dish. Microwave on high for 10 mins. or in the oven at 350 F for 1/2 hour.
