Nutty Quinoa Salad
| 1 cup Quinoa |
| 2 cups water |
| 2 tsp. grated orange rind |
| 1/2 cup raisins |
| 3 green onions |
| 1/4 cup canola oil |
| 1/2 cup peanuts |
| mint leaves shredded carrots, celery, red peppers |
Combine Quinoa and water in large saucepan. Bring to a boil. Reduce heat, cover and simmer for 10 minutes. Add raisins, and continue cooking until all liquid has evaporated. Remove from heat. Spread on baking sheet, let cool completely. In large bowl, combine all ingredients. Toss. Serve chilled with cold cuts.
