Norquin Quinoa Salad
| 2 cups quinoa, cooked according to package directions |
| 1 cup frozen peas, thawed |
| 1 carrot, chopped |
| 1/2 small red onion, minced |
| 1 tsp olive oil |
| 1 tsp grated orange peel |
| 1/4 cup chopped parsley |
| 6 tomatoes, hollowed |
In bowl, combine all ingredients but tomatoes, toss to coat well. Season with salt and pepper. Stuff into tomatoes. Makes 6 servings.
